Welcome to Book Club and Episode 2158 of the Italian Wine Podcast with Richard Hough. Today, Richard is in conversation with wine scientist and author Gus Zhu about his book, “Behind the Glass: The Chemical and Sensorial Terroir of Wine Tasting”.
Amongst other things, the conversion covers Gus’ career in wine, the latest wine trends in his native China, the different approaches to education in Asia and America, as well as taking a deep dive into the science behind the wine and debunking the “tongue map theory”. Gus also referred to the wines of Shangri-La in Yunnan province and the LVMH project – Ao Yun Wines & Spirits.

'Gus' Jian Zhu is the first Chinese Master of Wine. He works as a research and development scientist at Cork Supply and Tonnellerie Ô, specializing in chemical analysis and sensory studies on wine, cork, and oak. Gus is also a professional wine educator with over a decade of teaching experience.
