Chop medium-finely. Massage with the juice of half a lemon, 1 tbsp olive oil and salt. Let sit for about 5 minutes. While it’s resting, heat the pine nuts on stove top for about 2 minutes until golden brown. Shave a generous amount of manchego with a vegetable peeler, and thinly slice the pear. Combine with the kale.Dressing: In a small jar, combine the remaining olive oil, balsamic vinegar, maple syrup and few shakes of salt and pepper to taste. Shake the contents of the jar and pour over and mix into the salad. Serve into three hefty bowls and enjoy!
