Chop 1 butternut pumpkin, discarding seeds and skin. Add chunks of pumpkin to bowl with 1 cup of boiling water, 2 chicken/vegetable stock cubes, heat in microwave for 20 minutes. Puree with heat-safe blender/thermomix.
