Kristi Coughlin, MS, RDN, is a former private practice dietitian based in Central Oregon. Through her ten year career as a dietitian, she has worked a variety of jobs, including clinical, school nutrition, and teaching nutrition at two community colleges.
While she believed any of these positions would turn out to be her dream career, that was not the case. Though working in these positions severed as a great opportunity to gain experience in the industry, Kristi realized they did not fill her soul or bring out her passion for life.
Instead, Kristi recently took a massive leap of faith and closed her practice to pursue her dreams. You know the type of dream where you think, “I’d be crazy to do that.” Yea, that type of dream! To make it happen, Kristi has embraced her burning desire to inspire others. She now makes and sells products online in her shop @effectpositivity - which means to bring about happy.
The best part about Kristi’s new product business, it was born as a result of her experiences working as a dietitian. Former clients inspired the sayings on her products! Her most popular sayings include, You Are Enough, Choose Happy, and Keep Going.
In her spare time, Kristi can be found by the lake with her husband and kids, camping in the great outdoors, watching her daughters play volleyball, or drinking coffee and eating tacos (with black beans & sweet potatoes!) with her friends.
In this episode, Kristi and I discuss:
food is food. period. and food is NOT meant to be overcomplicated or unenjoyable
how trying to achieve a "perfect" eating pattern can set you up for failure (Kristi share with us a great story about her up against a pan of brownies. *hint* the brownies won this round)
the overwhelm of food choices and how confusing messaging about pursuing what is quote unquote "healthiest" or "best" can leave us making choices that go against common sense (*ahem* choosing soda > milk)
