<p>Loany Garrido is the co-owner of Hue Vegan Cafe, a food cart near Portland, Oregon. Loany quit her job and moved across the country to start her business. But she didn’t know she'd launched her food business the day before her state governor ordered everyone to quarantine and businesses to shut down in March 2020. Luckily, food carts were able to stay open during the lockdown, but it did come with its challenges.
