EP 17 — DENISE LINDBO 🎙️ Episode Seventeen is live. 30 Years of Feeding Downtown Minot. Denise Borjeson Lindbo and her mother opened Gourmet Chef in 1993 in a 400 square foot space in the Fair Building on Main Street. Six months later they were already knocking down walls to expand. Today Gourmet Chef fills 4,000 square feet with hard-to-find ingredients, an olive oil and vinegar infusion station, an espresso bar, and a full test kitchen for classes she has taught since 1997. Denise also sits on the Minot Downtown Business & Professional Association board, and has spent decades investing in downtown Minot as a community builder, not just a shop owner. Christine Staley & Corey Long sat down with Denise and what came out is a real conversation about what it takes to keep a small business alive on Main Street for thirty years, and why she still shows up every day to teach people how to cook.
